On the Menu Monday: Football Finger Food

Mr. Z & I recently hosted an impromptu OU football watch party and these are a few of the things I whipped up - - - 
DIY Corn Dogs, Football Sliders, Jalapeno Popper Dip (with “OU” colored chips) & Oreo Stuffed Chocolate Chip Cookies: 

DIY Corn Dogs
2 boxes Jiffy corn muffin mix
1-package hot dogs
1 can cream corn
1 small can diced green chiles
2 eggs
2/3 C milk
Yield: 24
Cut hot dogs into quarters.
Mix Jiffy corn muffin mix together with 1 can cream corn, 1 small can diced green chiles, 2 eggs & 2/3 C milk. Using an ice cream scoop (or spoon) ladle mix into greased muffin tin.
Place hot dogs in the middle of muffin mix.
Bake at 400 for approx. 22 minutes – serve with ketchup & mustard.

Football Sliders
Using a football shape cookie cutter cut buns into footballs.
Create burger sliders & top with your favorite fixings.
Top slider with football “laces” using mayo inside a plastic ketchup squeeze bottle (found at grocery or dollar store).

Football Cookie Cutter: 


Jalapeno Popper Dip
2 8oz. packages cream cheese
1 C light mayo
1 small can diced green chiles
½ jar of pickled jalapenos – drained  (or less depending on how spicy)
1 package shredded parmesan cheese
1 package mozzarella cheese
Combine and transfer into baking dish – bake 375 for 30 minutes.

Oreo Stuffed Chocolate Chip Cookies 

I went the super easy route here & bought the cookie dough (2 packages of one dozen) and stacked them with the Oreo in the middle. 
It turned out to be one GIANT cookie on my cookie sheet (not nearly as lovely as photo above) and I ended up cutting each cookie into quarters. These went fast!
