On the Menu Monday: Skinny Buffalo & Blue Wedge Salad

Following the directions for these Crock Pot Buffalo Chicken Lettuce Wraps I turned the wrap into a wedge salad by using a wedge of iceberg lettuce instead of lettuce leaves. I also added chopped onions, tomatoes & bacon.  Mr. Z is a fan of blue cheese dressing so I made Low Fat Creamy Blue Cheese Dressing for him and Low Fat Buttermilk Ranch Dressing for me (and bumped up the chives for a little extra kick).

Food for Thought: While at work, cook the Crock Pot Buffalo Chicken on low for 6 -8 hours instead of on high for 4 hours.
