Mothers Day Brunch Menu: Quiche Pops, Parmesan Cups & Savory Cheesy Donuts

Mothers Day Brunch Menu: Quiche Pops, Parmesan Cups & Savory Cheesy  Donuts - This menu would also be great for a baby shower, bridal shower, or any type of luncheon! 

I love a fun kitchen gadget. Honestly, pretty much any gadget. Whenever I spot a gizmo that makes something into a “mini” or small bite I feel I can't live without it . . . I have to restrain myself from filling up my cart at places like Bed, Bath & Beyond where these types of gadgets & gizmos are a plenty . . . lurking around each & every corner!

This past Christmas I had the Babycakes Pie Pop Maker & the Babycakes Donut Maker on my list and my SIL gifted them to me! I don’t bust them out on a regular basis, but they are very fun to have, especially to add some umph! to my entertaining regime . . . 

First Up, How to make Parmesan Cups (why do I always want to add an “e” = “sean”?)

Start with roughly 2 – 3 tbsp. of Parmesan shavings and place them onto skillet over medium heat. Parmesan will begin to melt, flip onto other side when the cheese is beginning to brown (I use 2 forks to "flip") - continue until both sides have browned.

Next (carefully, cheese cups are hot & delicate) place cheese “pancake”
over upside down brownie pop mold and gently secure with a condiment cup.

Once cooled, move Parmesan cup to paper towels to dry.

I filled these with a dill chicken salad, but you could fill them with whatever you choose. In the past I have filled them with all types of foods ranging from Caesar
salad to green chile macaroni & cheese to mini cheese balls . . . really anything goes!

Next up, Savory Cheesy Onion Donuts

I used the Red Lobster Cheddar Biscuit recipe that's floating around online and placed the batter into the Babycakes donut maker wells . . . the finished savory donuts are both cute & easy . . .  yes please! 

Finally, Quiche Pops (I chose to make a spinach Quiche filling for these, but any quiche filling would work great, choose your favorite) 

Mix together: 5 large eggs, 3/4 C half & half, ½ C milk, 8 oz. mozzarella, 4 oz. parmesan, 3 cups baby spinach wilted with ½ chopped saut√©ed white onion, 1 tbsp. squeeze garlic paste, dash of nutmeg, S & P.    

Place cut out circles of refrigerated pie crust on Babycakes pie pop maker, add filling from above, candy stick and 2nd cut out circle – continue until all wells are filled, bake, repeat. They cook fast – so be ready for the next batch! 

I froze the leftover quiche filling and used it to make a small frittata later. 

I paired the Quiche Pops, Chicken Salad Parmesan Cups and Savory Cheesy Donuts with a small fruit salad and mini cupcake - a small green salad with poppyseed dressing would also make a nice addition for this "small bite" brunch grouping.
